Pasta with Edamame and vegan pumpkin sauce


 This easy pasta is protein packed and easy to make. Combination of beans and card provides great protein sauce.

Ingredients

400 g pumpkin
100g Edamame
1 head of broccoli
300g pasta
228ml silken tofu

Method

  1. Preheat oven to 200, line baking tray with baking paper
  2. Peel, de-seed and cut pumpkin into 2cm cubes. Put onto lined baking tray and drizzle with olive oil.
  3. Bake pumpkin until soft. (Approximately 30 min or when a skewer goes through easily)
  4. Add boiling water into it your Thermomix mixing bowl. Place edamame and broccoli on the bottom layer of Varoma dish. Cook 10 to 15 min/ Varoma/ Speed 1. Put Varoma dish aside and empty the bowl.
  5. Cooking pasta on your stove top at the same time.
  6. Place cooked pumpkin (set several pieces aside for later use) and tofu into mixing bowl, blend at 30 sec/ Speed 7.
  7. Combine pasta, sauce, edamame, reserved pumpkin and broccoli and serve.
